Well, the crew of The Daily Special will be arriving at my apartment momentarily to shoot the first episode in a while of Cooking with Kim.  I really do love the cooking segments, but they’re so hard to schedule.  I adapated my kale and white bean soup, adding chicken sausage.  We shall see how it turns out.

I’m in nesting mode.  My apartment is almost completely empty.  I want to buy things, to make it pretty and girly.  If anyone has any decorating tips, where to get cool cheap decorative items, do-it yourself housey stuff, please pass it on.  I’m somewhat of a novice when it comes to decorating.

So far today I’ve only had breakfast, so this will be a post as I go sort of day.

Things are full swing ahead in regard to moving in my apartment. I’m not going anywhere, but my roommate of 4 years is moving out to go co-habit with his girlfriend in Los Angeles. He was a good roommate-I’ll miss him. I’ll also miss his stuff. The apartment was fully furnished when I moved in. I bought his couch, tv, and the lawn mower (even though I really didn’t want it), and some other stuff off him, but I need to get some decorations stat. I find this to be somewhat nerve wrecking really. I’m sort of self conscious that I don’t have any style. I mean I have my stuff in my room that’s very me, but I’ve only ever decorated my bedroom, not a whole apartment. I need to get art, ART, lots of ART. And a coffee table. Some shelving. Possibly an arm chair. Currently my television rests on cinderblocks, which is way cool but not particularly girlie and I’m thinking of adding the slightest hint of estrogen to my space, as it’s been pretty testosterone heavy these last few years. Also, if I could win the lottery so I an afford to decorate in the manner I wish to that would be great.

Last night was much later than I expected. Drinks with some friends, all of whom recently left an Obama fundraiser. I’m actually one of the 13% of Americans that is undecided politically so far, I’m leaning toward one candidate, but really need to do some more research, and see who the third party candidates are before I can make a decision I’m totally comfortable with. It was good to hear their opinions. I do like to hear what people with rational thought processes have to say about politics, the problem is that so many people just yell and get so angry that I feel cowed by political conversation much of the time. Voting is super important, and not something I take lightly. When I was studying abroad in college, the only mail my family sent me was my absentee ballot-and that was for a local town election. After drinks and political talk, I met up with some other friends who were finishing up dinner and we got another drink. Two drinks (one with the earlier group, one with the latter) and I felt toasted-what has happened to my tolerance people? I finally got home around 1am. Not good Monday night behavior, bad Kim.

Tonight I’m headed to New Jersey after work for a screenplay reading. My friend Stacy (who used to work on The Daily Special, when it first started and was more sketch comedy based) wrote a screen play, and is hosting a dinner, reading, talkabout tonight. She wrote the main female role for me, which is so sweet and wonderful, and I’m so honored. So, that will be the festivities tonight.

Elaine: In regard to my food choices; I’d like to think that the majority of my adult life I’ve made fairly healthy eating choices. I started really focusing on healthy eating in college, albeit my idea of what is healthy has evolved over the years. I try to mainly stick with natural, non-processed foods, but I’m not perfect. Everything in moderation-including moderation; I certainly have my over indulgent moments (see weekend review). I had to read a book called The Jungle Effect, for the show a few months back, and it basically highlighted indigenous diets around the world and their lack of disease in those areas. It really drove home the idea for me that the food we eat should be in it’s least processed state. Which brings me to a segue to Hungry Girl. I think the newsletters highlight a lot of interesting new food items, and provide healthy alternatives, but I think that many of the foods it promotes are very processed-and so I tend take a lot of those suggestions with a grain of salt. I believe she focuses mostly on the Weight Watchers point system. To each their own, I’m not a huge fan/reader, but I do see that there’s value in many of her suggestions. Hope that helps. Weekend in Review
Oh, the junk food that happened this weekend. Friday night was chinese takeout and junkfood with the girls as we watched romantic comedies and gossiped. I have to say I didn’t eat much of the Chinese food-the take out on Long Island is nothing compared to the take out in NYC. I guess I’m just spoiled. In the morning there was cinnamon rolls, then we went out for brunch/lunch where I had egg/sausage sandwich sliders-way greasy. That night we took my Dad out for Indian food, for his first time ever, and I had Paneer Sag, which is my favorite. The next day we had chicken and brocolli for lunch, and I had a Peacan Crusted Chicken Salad for Dinner. I need a detox.

Chickpea & Eggplant Stew (adapted from 125 best Vegetarian Slow Cooker Recipes)


INGREDIENTS

2 tsp cumin
1 large eggplant, peeled, cut into 1-2 inch cubes (sprinkle with salt and cover with a paper towel to drain of excess moisture)
1 tbspn olive oil
4 cloves garlic
1/2 tsp tumeric
2 tsp crushed red pepper flakes
hot sauce to taste
1cup vegetable stock
1-28oz can diced tomatoes with juice
2 large potatoes cut into 1/2 inch cubes
1-15oz can chickpeas

Sautee onion till soft, then add eggplant, cook till brown. Add garlic, cumin and turmeric and cook for another minute. Add vegetable stock, tomatoes with juices, stir. Bring mixture to a boil, cook and stir for another minute.

In slow cooker add potatoes, chickpeas and pour mixture. Add in crushed red pepper and hot sauce. Stir to combine.

Cook in slow cooker on low for 8-10 hours or on high for 4-5 hours.

I guess it’s no surprise given my weekend smörgåsbord, but I do feel like I’ve put on a few pounds in the last month or so. I think my schedule has been a bit hectic, there’s been lots of eating out, lots of readjusting to new responsibilities, lots of going away. I need to put a little more thought and dedication into my eating/exercise plan. I think now that fall is just ’round the bend things in the rest of my life will slow down and I can focus on training for my two upcoming athletic events, and there will be less social commitments to juggle. Fingers crossed.

I’m in a pretty foul mood today.  Woke up on the wrong side of the bed I guess.  I’m probably not going to workout.  As I have  a coffee date with a friend at noon, then I’m heading out to Long Island for some good old fashioned girlie time.  I totally forgot to take pictures of my dinner last night, but it was pizza and wine.  Yeah, I’m a classy broad.

Well this has most certainly been an eventful week. I mean, one need only look at my freezer to see that I live a somewhat bewildering life:

I’m telling you: if you want random free things-write stuff on the internet. Also, if you want a klondike 100 calorie bar-come over, I’ve got plenty.

Today is my Friday so to speak, after work I’m meeting up with some friends for happy hour and dinner. My friends main goal in life is to land a finance man, so I’ll be serving as wingwoman for her, which shouldn’t be too hard since we’ll be hanging out with pick up artists-if they can’t help the situation then the situation is probably hopeless. After happy hour we’ll be meeting up with others. It may be a long night, I’m going to try and nurse my drinks, because I really do want to cut back on drinking and it’s just stupidly expensive to go out sometimes. Then tomorrow I’m heading out to Long Island for a sleepover with my besties and then birthday festivities for my dad-who turns 62 on Monday. Meanwhile today is a birthday of another color-today is my friend Becky’s birthyday-Becky if you’re reading this happy birthday!

Okay, enough of the shout outs, here’s the food:

I never want to see a cookie again. I must have made hundreds last night. Okay, not hundreds, but around 50, which I split between my tummy, a fed ex care package to a friend, and the crew of The Daily Special this morning. After all that baking, I so didn’t want to make soup last night, so that will be a project for tonight. Tonights activity will probably be an exercise video for personal use and review for Elastic Waist. We shall see.

I had a pretty hilarious happening this morning. I got to work and was immediately given a giant box of Ice Cream by the very nice fed ex guy. A representative from Breyers/Klondike wanted me to try some of their new low fat ice creams. I thought I would be sent a single container, but no, I’ve got whole sale icecream quantities right here. Now I have to figure out how to get it from work to home without it melting. This could prove interesting. I may buy some ziploc bags during lunch to fill with ice.

Well, like I suspected my plan to spin and bake was derailed last night, but I did have yummy Italian food. Tonight however, there will be cookies baked and miles run. I’m heading home after work, baking, then I’ll hit the gym (post rush hour) for a run and some strength training, come home and make some kale and white bean soup for dinner/lunch the rest of the week. Sounds like a good plan to me.

Well my big confession is that I did not photograph my food this weekend because it would have just seemed strange and inappropriate in the given circumstances-but for the most part I ate pretty healthy and there was exercise had.  Also sun.  I religiously use sunscreen, spf 50, and I’m still a little burnt.  I’m wearing a strapless bra and tube top today just because I don’t want anything touching my shoulders.  It’s really not that bad, but still a little sore.  All in all it was a really pleasant weekend.  My friends parents were great hosts, we went to a high-falooten cocktail party with a governor in attendance.  Went out to a club.  Sat on the beach, walked around, went swimming.  A great summer time weekend.

I must say this whole being employed thing is really cramping my style.  I have this harebrained scheme that in 9 months to a year I’d like to go freelance.  I’m going to be taking some writing classes and I’d like to just write from home, that will give me more time to audition and get back into the acting world.  But I’m going to try and save as much as I can now.

Back to blogging the food.  I’m not sure what I’ll be doing exercise wise tonight.  I was planning on a spin class and cookie making tonight, but my plans may be sidelined.  As for food, here’s the roundup thus far:

Cam: I think you may be right about the anemia.  I was tested a few weeks ago to give blood and they said I was anemic, which is something I’ve struggled with in the past.  I’ve been trying to eat more meat and green leafy vegetables.  I do have a bottle of iron pills in my cabinet, I’m trying to avoid being the supplement queen.  Thanks for your wise insight.  I love the cooking segments too, and we do have another one on the docket.  It should be airing around labor day-I’ll try and remember to let you know when it’ll be up.  They tend to be the hardest segments for us to schedule because they require me to take off work.    Thanks for your compliment about my skin, to be honest I use Oil of Olay-I know right?  I figure if it’s worked for generations of grandmothers everywhere, it’s good enough for me.  I try and remember to put an eye cream on before bed, and every other day I put Philosophy’s Vitamin C powder in my moisturizer (every day seems to be a little too abrassive for my skin).  I hope that helps.

I’m heading out to the Hamptons this afternoon.  I didn’t actually make it out there last weekend, but this should be a more low key weekend anyway.  I haven’t been to the beach all summer.  Be prepared for me to look like a lobster on Tuesday’s episode of The Daily Special.  I’m obsessive about sunscreen because I’m very fair skinned, but I usually get burnt somewhere along the way.

Last night I had a date, went out to dinner and a movie.  Dinner turned out to be much bigger than expected.  I’d asked  how big a soup was, because I was considering getting it for an entree, and the waitress said it probably wasn’t big enough for an entree (which it totally was) so instead I ordered an entree, but they brought me the soup too!   By the time I went to bed last night I was about to burst.

I’m not sure whose body I’m living in currently, but it sure as hell doesn’t seem like mine. I’ve been sleeping so much. I’m not sure if this is a reaction to being sick or just my bodies way of telling me to slow down. The upside is that my skin, which had been starting to look a little dull is looking much more radiant, the bad news is it’s making my exercise schedule seriously confusing. I finally did that exercise DVD review last night, and it was actually a super fun video-the review will be up on Elastic Waist later today. It was good to get moving, but I definitely passed out at 9pm when it was over. I was going to get up and run this morning pre-work, but again slept late-till 7:30. I think I need to do a scheduling overhaul. My body obviously does not want to run on 4 hours of sleep a night any more, but I can’t let my gym time dwindle because of it. I think this weekend I’m going to have to go over my schedule and see where I can make some improvements. It may be time to implement a bed time (wow, I’m such a 10 year old). Some friends and I are signing up for the Cincinnati half marathon in May, and I’ll be doing the American Lung Association Stair Climb again in April-that means a lot of training this year. I better get myself on schedule.
